A former math teacher turned third-generation grower, Huver produces this exceptional lot at El Paseo, a family farm nestled on the volcanic slopes overlooking the valley of Buesaco. Working alongside his father on land that has been in their family for over twenty years, he cultivates this rare Gesha variety with mathematical precision.
This lot undergoes a highly innovative process, starting with a 20-hour pre-fermentation in whole cherry before being depulped. The coffee then undergoes 210 hours of anaerobic fermentation in sealed steel tanks, inoculated with a dough of beer hops and sugarcane juice to amplify its natural floral intensity, citric brightness, and sweetness. Following fermentation, the beans are sun-dried on patios for 10 to 20 days until reaching optimal moisture, before undergoing a 30-day stabilization period in GrainPro bags to let the complex flavors mature.
